Just about any beer enthusiast can tell you that beers higher in alcohol content can age well, getting even better as the years pass by. What they can't tell you is why this happens.
This is the fourth part in a series of posts that is examing this phenomena. This article examines the idea that it might not be the ethanol in the beer that is causing it to age well, it might actually be other compounds produced by the same brewing methods that make high alcohol beer.
